Square Cut Shoulder

Derived from a forequarter by the removal of the breast, neck and foreshank. Breast and foreshank, are removed by a straight cut made at the first rib/sternal segment running parallel to the spinous process. Neck is removed between the 3/4 cervical vertebrae.
